Brussels sprouts…I can’t seem to get enough of them! I didn’t grow up eating these little green things so of course I just figured I didn’t like them. Unfortunately, I could not have been more wrong. In my 30th year of existence, I have discovered what may be my favorite vegetable. I find myself ordering a side or appetizer of brussels sprouts at about every restaurant I go to, I buy a pound of them every week from the farmer’s market (they are in season :))or grocery store, and I even have my husband hooked on them along with me. Its a good thing they are healthy for us! Brussels sprouts contain 20 essential vitamins including vitamin A, vitamin, C, and vitamin K. They also offer us cancer-fighting properties, fiber, protein, and wonderful minerals. I have been experimenting with them in the kitchen and so far this recipe below is my favorite. It is very easy, delicious, and can pair with pretty much anything.
Ingredients:
-1/2 lb. Brussels sprouts (halved or quartered)
-1 tbsp. Olive oil or your favorite neutral flavored cooking oil
-Salt (to taste)
-Pepper (to taste)
-Garlic powder (to taste)
-1/2 tsp. Chili pepper flakes
Directions:
In a saute pan, heat the oil on medium high and add brussels sprouts. Stir often until the brussels sprouts brown some on each side. Add 2 tbsp. water, lower heat to medium/low and cover for 5 minutes. Remove lid and season with garlic powder, salt, pepper, and chili pepper flakes. Serve and enjoy!

I’m sure I’ll be singin, “Sprout, sprout, let it all out!!”, especially with all of those nutrients and “wonderful minerals”. Mmmm
