Ever wonder what to do with those holiday dinner leftovers? This recipe is a MUST for all of you who love those sides more than the dinner’s main meaty attraction. Its easy to whip up and totally delish. Oh and don’t feel like you have to wait for leftovers, we cooked this up together the other week on one of our “stay in-date nights”. It pairs well with an episode of “Homeland”. 🙂
INGREDIENTS:
4 cups prepared stuffing (keep it vegan!)
4 cups prepared mashed potatoes
2 cups fresh green beans (cooked)
1 cup french fried onions
1/2 medium onion
4 cloves garlic
1 tbsp olive oil
salt and pepper to taste
DIRECTIONS:
Saute onions and garlic in a pan with olive oil on medium high until slightly brown. Mix all ingredients in a bowl and form patties. Pre-heat oven to 350. Bake patties on non-stick cookie sheet for about 20 minutes. Eat “burger style” or open faced on your favorite bread (see picture). Makes 8 large patties.
